White wine for fish: which one to choose?

White wines are an ideal choice to accompany fish and shellfish dishes because of their fresh, fruity notes. These wines are characterized by low tannin content and good acidity, making them perfect for balancing the delicate flavor of fish.

However, not all white wines go well with every type of fish, and it is important to choose the right pairing to best enhance the flavor of both. The choice of white wine depends mainly on the type of fish to be served. In addition, in general, white wines to be paired with fish should be served at a cool temperature, around 10-12 degrees, to best enhance the aromas and flavors.

Pairing fish with Ermacora white wines: tips and advice

White wines are often the perfect match for seafood dishes because of their freshness and fruity notes that go well with marine flavors.

Friulano and Ribolla Gialla are two of Ermacora's white wines best suited for pairing with fish. Friulano, a fresh, savory wine, has a hint of bitter almond and a lingering, harmonious aftertaste that makes it perfect with fish dishes made with light, delicate sauces. Ribolla Gialla, on the other hand, has a fruity and fresh aroma with floral and citrus notes, making it ideal with raw or grilled fish dishes.

To choose the right white wine based on the type of fish and preparation, it is important to consider the structure and degree of intensity of the dish. For example, a lean fish such as sea bass or grilled swordfish requires a light white wine such as Friulano, while fattier and more structured fish dishes such as tuna or salmon require a more structured and complex white wine such as Ribolla Gialla. In any case, choosing the right white wine to pair with fish can make all the difference and turn an ordinary meal into an extraordinary taste experience.

Perfect pairings: Ermacora white wines and traditional Friulian fish dishes

Pairing the right wine with fish dish is an art, but it doesn't have to be complicated. With the right tips, you can become a food pairing expert!

Ermacora white wines can be an excellent choice to accompany traditional fish dishes from Friuli and beyond.

For the chowder, we recommend you try our Friulano. This dry, aromatic white wine is a perfect match for the strong, intense flavor of fish chowder. Its fruity notes and slight acidity perfectly balance the flavor of the fish and spices.

For risotto alla marinara, however, we recommend the Ribolla Gialla. This white wine has a dry and slightly fruity taste, with hints of almond and a slight acidity that goes perfectly with the delicate flavor of risotto. Ribolla Gialla is also ideal with grilled fish, clams and spaghetti with mussels.

But don't limit yourself to traditional Friulian dishes, our white wines also pair well with international dishes! For example, try Ribolla Gialla with sushi or ceviche, or Friulano with a grilled lobster dish. Experiment with our Friulian white wines and tell us about your perfect pairing.

How to serve white wine with fish: Ermacora's tips

Once the perfect wine has been chosen, it is important to serve it at the right temperature and choose the right glass to fully appreciate the wine's organoleptic characteristics.

For our white wines, in general the ideal serving temperature is around 10-12°C, depending on the type of wine and its organoleptic characteristics. To reach the right temperature, you can keep the bottle in the refrigerator for at least an hour before serving. Alternatively, an ice bucket filled with water and ice can be used to cool the bottle quickly.

As for glasses, glasses for white wine should be narrow and elongated in shape, with a maximum capacity of about 300 ml. In this way, the wine retains its organoleptic characteristics and its aroma and flavor can be appreciated optimally.

During dinner, it is important to keep the wine at a constant temperature, avoiding temperature changes that could alter its characteristics. In addition, it is advisable to serve the wine in moderate quantities, so as to avoid numbing the palate and better appreciate its nuances.
